In celebration of Zero Waste Week (2nd - 6th September), The Mutton, a charming, family-run pub nestled in picturesque Hazeley Heath, is set to host a special Zero Waste Dinner on Thursday, 5th September.
The Mutton's talented Head Chef, Rob Boer, has meticulously curated a five-course meal that champions sustainability to be served exclusively at the event. Emphasising zero-waste principles, the menu will showcase the finest local ingredients and innovative cooking techniques aimed at minimising food waste.
Menu highlights include:
Nibbles: Mutton BBQ Ribs (saved from pork belly, marinated and slow-cooked overnight, with BBQ sauce made from herb offcuts), Mackerel Tails (typically discarded), Broccoli Fritters (made from broccoli stalks), and Crackers (made from sourdough trimmings, soaked, pureed, and dried into crackers).
Mini Lemon Sole: Normally thrown away due to their small size, these are prepared with gremolata.
Venison: A sustainable protein sourced locally, using all parts of the deer. The prime loin is featured alongside a Bolognese croquette made from offcuts, with a Boulangère potato flavoured from stock using venison bones.

Each of the five courses has been thoughtfully crafted to minimise waste and maximise flavour, underscoring The Mutton's commitment to sustainable dining. To complement the dishes, a range of sustainable wines will be matched to the dishes, carefully selected to enhance the flavours of each course.
